We take pride in running our business out of this historically important building, where good food is our top priority. Keith Payne - Owner, manager, and recruiter of potential talent for our training program, Alamedas In Action. Sandra Lee - in charge of catering services, Sandra brings creativity and a wonderful attitude to this business. She also serves as a patisserie chef in our dessert restaurant, Lolita. Chris Cognac - Being a wine and liqour enthusiast, Sommelier Chris Cognac directs our chefs in matching drinks with foods, giving our menu a complex personality. , Marcella Valledolid - Works the weekend shift, where we serve a limited menu for free to veterans with proper ID. Marcella shows great promise and we hope to give her a more permanent position on our staff. In addition, Las Alamedas has a crew of 20 chefs, 40 waitstaff, 20 hosts/hostesses, and about 50 other employees.
