His father was a butcher and owned their paternal family butcher shop/Italian grocery store. Later, moving on with his own family, opened two restaurants that they've been involved in. Their family business “Orlando le Roi du Sous-Marin” first opened in 1980 and “Trattoria del Buon Gustaio” from 1982 to 1989. Orlando started working there during the weekends and summer time. After two years of school in a business commerce program at Dawson College, he decided to pursue a managerial position in the restaurant and as a Chef. Now, with 24 years of experience in the food service, he has brought his success here to the South Bay area, at Redondo Beach. Nested in a strip mall along Torrance Boulevard in the old Calamari's location, Orlando's Pizzeria & Birerria intends to up the ante with Italian and French fare. Chef and owner Orlando Mulé recently moved to LA from Montreal, and brought with him several hometown dishes to supplement his pizza and pasta-centric menu. Think French bistro fare like French onion soup and beef tartare in addition to what is perhaps the most well-known Canadian dish, poutine, made with Montreal-style smoked brisket.
