"Hello and Welcome to our site! I am Chef Idalee and I have been in business since 1982. I began by producing corporate logos in chocolate and also a chocolate truffle known as the “Idalee’s of Texas” which sold in 23 states around the country. I did that for 9-1/2 years in Houston and then sold off part of the company, and put the rest on hold, to go to the Culinary Institute of America in Hyde Park, NY, where I earned my degree in Baking & Pastry Arts.
