Our fresh, never frozen, chicken is fried by a special method started by Al and Lucille Bieker in 1949. Dinners are prepared by the order while you Al and Lucille Bieker began business with Al's sister in the Plantation Grill in Salina, Kansas. They soon decided they wanted their own place, so they packed up their stove and moved to Hays. The local history states that they built the building from the ground up, however, according to Trisha St. Peter's research, they obtained an Officers Quarters from Walker Airforce Base and moved it to it's present location at 700 Vine Street. They remodeled it to accomodate their new restaurant, Al's Chickenette. (The original color scheme was blue and pink with hardwood floors) Many thought it would never go but on April 23, 1949, they opened the doors and started serving fried chicken. With the help of the people of Hays and the surrounding area, they saw their dream come true.
