Roasting coffee is as much art as science. I began roasting a few years ago, roasting and burning through air poppers, but gaining the ear and nose for a perfect roast. Many tweaks and hacks later, I invested in a sampler roaster for consistency and quality. Each roast is carefully tracked and monitored by temperature, along with attention to the sounds and smells.
