The ServSafe Manager Certification is a great tool assisting you with proper food handling practices and obtaining your Food Handlers card, if required. One VA Code Requirement: The permit holder shall be the person in charge (PIC) or shall designate a PIC and shall ensure that a PIC is present at the food establishment during all hours of the operation. The PIC may demonstrate knowledge by passing an accredited program and being a Certified Food Protection Manager.
