Festival Facts The Creole Heritage Zydeco & Crawfish Festival was founded in 2004 as a fundraiser for Our Mother of Mercy Catholic School located in the 5th Ward of Houston. The first festival was held at Jones Plaza located downtown Houston: there were five bands invited to perform with over 3,000 people in attendance. Over the next three year the festival moved around throughout Houston, finally settling in Baytown, Texas.
