Our fish are wild caught from the fresh waters of the Atchafalaya Basin. Over the yaers we have perfected the processing of this roe into an Award winning Louisiana Seafood Delicacy !!! We harvest from early December through mid-February, and sell everything we can produce every year !!
"Ghost Pepper Caviar" is a 2 time "Best in Show" Award winner. It is the only product of its kind !!! We found a way to infuse the Naga Jolokia pepper into our roe to get the flavor of the pepper without the burn !!! A must try if you'd like to put some WOW into your caviar !!!
