Harbor Island Oyster Co. was founded on the idea that if you do what you love, you'll love what you do. All of us here really, really love oysters. We will eat them raw, steamed, fried, broiled, in soup, on salads, in a sandwich, in a house with a mouse, in a car, in a tree, in a box with a fox, and on a train in the rain. From small, sweet Pacific Kumamotos and Hama Hamas to super salty Duxbury Island Creeks to PEI's pervasive Malpeque's to Maine's Glidden Points to the always yummy, Atlantic Bluepoints and Barcats. We even seek out European Flats - the brassier, the better. We eat a lot of oysters but never spent the time to find the right shucker - one that would work on all oysters and would make us look good using them. So we set out to find the perfect knife that would impress the most intense ostreaphile (oyster lover). We tried dozens of shucker knives, and liked a few, but ultimately we fell in love with our Signature Oyster Knife. The stunning Paderno is great for shucking raw oysters or for popping open steamed ones. Its "Wow!" factor means they make great gifts for everyone (including yourself!). After we found the perfect knife, we then set out to find a way to personalize each one so there would be no doubt who belongs to our knives at the next oyster roast.
