Carville Holmes has been a hunter nearly all his life and has worked as a stone mason for over 30 years. As a kid, he helped slop the pigs, feed the steer, skin the hunt and butcher whatever he and his family brought in during hunting season. By now, Mr. Holmes could probably skin, butcher and process a buck in his sleep. He's hunted all over the United States, but always finds his way back home to the beautiful West Virginia. He loves getting back to the quiet of the woods, after all, it's hard not to enjoy hunting on a crisp autumn morning in our wild and wonderful state. With his breadth of experience, Mr. Holmes has found all kinds of delicious techniques for preparing meat, especially venison. While looking for new ways to use some of the tougher cuts (think neck and foreleg muscles) as well as the gristly and tendon-filled cuts that will gum up even the best of grinders, Mr. Holmes experimented with curing the meat. He found that this process leaves these tough cuts tender as well as delicious and knew he was onto something. Not every batch was a success at first, but Mr. Holmes wasn't deterred. After some testing and refining, he developed Carville's Corned Venison Mix, which can be used to cure most red meats and is especially tasty when paired with venison. Realizing that many hunters were throwing away perfectly good cuts of meat, Mr. Holmes decided to market his Corned Venison Mix to the public. Mr. Holmes has tested his product on beef, elk and venison, but has a sneaking suspicion that bison and moose would be equally delicious when prepared with his mix!
