Hill Country Deer Processing (HCDP) is Gillespie County's oldest and largest custom processor. Gillespie County has the highest per capita deer population in the US with six deer for every person. The overpopulation of deer and the land management issues facing the hill country have become factors in determining how we at HCDP perceive industry changes.
