We source directly from seasonal fisherman in Alaska, California, and Oregon, as well as having dedicated fresh fish buyers on the ground at Japan and China’s premier fish markets. Ordering in person and maintaining our relationships and regular purchases with these fisherman and auctioneers allows us the best of catch for restaurant/sushi grade fresh fish, as well as first-choice for wholesale fish and shellfish. There are several shellfish and salmon boats that port directly with us in Alaska and California, and we work closely with some of the best specialist suppliers in the Pacific.
