Lucienne's Ithaca Chocolates creates exceptional chocolate bars using high quality 70% dark chocolate and 43% dark milk chocolate. Our chocolate is custom made for us, in small batches. We use 100% Rainforest Alliance Certified(TM) Chocolate and cocoa products. Our chocolate producer has a direct relationship with the farmers and is able to carefully control the fermentation and drying processes to yield chocolate that has a wonderful flavor without bitterness, even at high cocoa content, without added excessive cocoa butter. Our dark milk chocolate is made with whole milk powder, not the whey powder common in lower quality chocolates. It has a deep, rich flavor, together with a silky, creamy texture.
